Cinnamon Maple Granola

I absolutely love having some healthy homemade granola on hand. I love this one as it’s designed for you to break into clusters and it’s nutritious and everything you could ever want in a granola. Feel free to swap out the chopped dried apricots for dried cranberries, dried cherries or whatever your heart desires!

Ingredients: 
3 cups gluten free rolled oats
¼ c gluten free oat bran
1 c pumpkin seeds
1 c slivered almonds
¼ c olive oil
½ c maple syrup
1 tsp vanilla extract
¾ tsp salt 
½ tsp ground cinnamon
1 c chopped dried apricots

Method:
Preheat the oven to 325
Line two rimmed baking sheets with parchment paper
Combine the oats, oat bran, pumpkin seeds, and almonds together in a large bowl. In a small bowl, whisk together the oil, maple syrup, vanilla, salt, and cinnamon. Add to the oat mixture and stir until well combined. 
Next, spread the oat mixture on the lined baking sheets in an even layer. 
Bake for 30 to 35 minutes without stirring, until the edges are browning and the centre is lightly golden. 
Let cool completely on baking sheets, then break into clusters. Add the dried fruit and mix gently.
Add to a nice jar & you have yourself some beautiful and delicious healthy granola! 
I personally love serving mine over coconut yogurt with some berries on top with more cinnamon.
